糖醋脆豆腐

Steps to make 糖醋脆豆腐

  • 1.嫩豆腐适量切小丁(老豆腐也可以)
  • 2.水烧开加少许盐放入豆腐煮一两分钟(一方面去除豆腐豆腥味一方面增加豆腐的韧性)
  • 3.捞出沥干水分
  • 4.调个脆皮糊:玉米淀粉和面粉和吉士粉比例1:2:1,加入少许泡打粉和少许油,加适量的水用手搅成稠酸奶状糊
  • 5.把豆腐放入糊里轻搅匀,挑一块豆腐能裹饱满糊说明糊正合适
  • 6.油五成热放入豆腐慢慢炸
  • 7.炸至金黄捞出,然后升高油温在复炸一次
  • 8.捞出备用
  • 9.调个糖醋汁:番茄酱3勺,白糖4勺,白醋4勺,料酒少许,盐少许,水淀粉适量
  • 10.锅倒少许底油烧热
  • 11.然后倒入糖醋汁烧至冒大泡
  • 12.倒入炸好的脆豆腐
  • 13.迅速翻匀淋入少许明油出锅装盘
