玫瑰花酱是为着月饼买的,做了这许多月饼,却基本上没怎么动过。因为玫瑰酱主要用于那些老式的传统口味的月饼,而这样的月饼,基本上没怎么做过。这次就让玫瑰香唱一次主角,来一个玫瑰月饼。其实,这个馅料的配方比较适于做酥皮月饼,只是家里不喜欢酥皮,所以还是勉强做成了广式

  • 玫瑰酱180克
  • 花生仁60克
  • 芝麻仁60克
  • 核桃仁40克
  • 白砂糖20克
  • 玉米油30克
  • 熟糯米粉100克
  • 广式饼皮面团216克

Steps to make 果仁玫瑰月饼

  • 1.准备馅料
  • 2.将所有果仁切碎放入大碗
  • 3.混合均匀
  • 4.加入玫瑰酱
  • 5.拌匀
  • 6.加入油
  • 7.拌匀
  • 8.倒入熟糯米粉
  • 9.拌匀
  • 10.将拌好的馅料分割成28克一个的小球
  • 11.饼皮面团分割成12克一个的剂子
  • 12.取一个面剂,按扁
  • 13.包入馅料
  • 14.收口搓圆
  • 15.月饼模中放少量面粉,摇晃均匀后倒出
  • 16.放入月饼坯
  • 17.压出花型
  • 18.将月饼放入烤盘,排好,表面喷水,放入预热160度的烤箱,烤约10分钟左右,至定型
  • 19.取出刷蛋液,放回烤箱中,继续烘烤15-20分钟
  • 20.表面金黄,出炉
