Steps to make 腌朝鲜辣白菜

  • 1.大白菜清洗干净,平均分成四等份,均匀地抹上食盐,每个菜帮之间都要撒上盐。
  • 2.我在白菜上面盖个盘子,上面压上一盆水,腌制一个晚上,腌至白菜变软,腌出许多水份来,腌出的水分倒掉不要。
  • 3.白菜用凉水洗去多余盐份,再用凉白开水清洗一遍,尝尝白菜略咸即可。
  • 4.准备好其他的配料。
  • 5.加入一勺卤虾酱,白糖和少量食盐,搅拌均匀,食盐的加入根据腌好的白菜口感决定,如果菜已经很咸了就不用再加盐了。
  • 6.糯米粉加适量水,放锅里煎成糊,粘稠度像浆糊样即可。
  • 7.白萝卜,芹菜,圆葱,大蒜,鲜姜分别切成末备用。
  • 8.苹果,雪梨分别切成末,韭菜切段备用。
  • 9.所有切成末的配料全部倒入晾凉的糯米糊中搅拌均匀。
  • 10.再把韭菜段和步骤5中辣椒糊倒入糯米糊中搅拌均匀,腌制辣白菜的腌料就做好了。
  • 11.取四分之一棵白菜,戴上一次性手套或套上保鲜膜给白菜均匀地涂抹上一层制作好的辣椒糊。重点是抹白菜梗,叶子上可以少抹一些。
  • 12.把涂好腌料的白菜整齐地码放在可以密封的保鲜盒中,如果保鲜盒密封性不好,可以在保鲜盒的外边包上一层保鲜膜,先室温发酵一天,再放入冰箱六到七天即可食用。。
