奶油蓝莓冰皮月饼
做奶油蓝莓馅的时候就计划着要用来做个冰皮月饼了。想给表皮也来点颜色,就在用料中增加了蓝莓酱。不过没敢多加,结果表皮的颜色不是很明显

  • 澄面20克
  • 牛奶180克
  • 糖粉50克
  • 玉米油18克
  • 蓝莓果酱10克
  • 奶油蓝莓馅170克

Steps to make 奶油蓝莓冰皮月饼

  • 1.准备冰皮用料
  • 2.将少量牛奶倒入蓝莓酱中
  • 3.搅拌均匀
  • 4.将蓝莓牛奶,糖粉,油和牛奶倒入大碗
  • 5.搅拌均匀
  • 6.将三种粉倒入另一个碗中,加入牛奶混合液
  • 7.搅拌均匀
  • 8.过筛2次
  • 9.倒入容器中,封好保鲜膜静置半小时
  • 10.大火上锅蒸25分钟
  • 11.取出
  • 12.趁热搅拌
  • 13.揉成顺滑的面团,放至冷却
  • 14.分割成18克一个的面剂子
  • 15.奶油蓝莓馅分成12克一个的小球
  • 16.将面剂用切面刀压抹成中间厚边缘薄的圆片
  • 17.放入馅料
  • 18.包起
  • 19.收口向下放置
  • 20.月饼模中装少量熟糯米粉,摇晃均匀,倒出
  • 21.放入包好的月饼
  • 22.将模具扣在案台上,推下手柄,压实
  • 23.提起模具,推出月饼
