一举三得的美食御寒补胶元又美味-------老妈蹄花
成都有一道非常有名的小吃叫老妈蹄花,其实说简单点就是芸豆炖猪蹄,四川人吃炖的菜菜好象都挺喜欢用蘸料的,只要有了美味的蘸料,不管多么普通的食材,都会一下子升级为美味了。
        还是好多年前吃的了,想象着做了一下,不是正宗的哈,那是商业秘密,我也不知道需要放什么料,只是自己凭感觉就这样做了。
        自己总结老妈蹄花有几个特点:1、汤白。2、肉粑(这个字认识吗,四川话念PA,就是软的意思,四川有个非常有名的名词叫“粑耳朵”)。3、汤里一定要加小葱。大概就是这几点啦,其它的,就自己想象着做吧。

Steps to make 一举三得的美食御寒补胶元又美味-------老妈蹄花

  • 1.芸豆提前一晚用清水浸泡。
  • 2.猪蹄剁成小块,洗净,有时间也可以让猪蹄在清水里泡一段时间再洗净。
  • 3.烧一大锅水,放一些姜片和花椒,水开后倒一些白酒。
  • 4.把猪蹄放进烧开的水里,焯几分钟。
  • 5.焯好的猪蹄用清水冼净,放进锅里,再另外加入清水。
  • 6.大火烧开,保持大火煮半小时,我煮的时候没有盖盖子,因为猪蹄已经焯过水,所以现在的水很干净,但仍然会有少量的浮沫,用勺子舀起来不要。
  • 7.半个小时后,把火关小,放入泡好并且洗净的芸豆,再加入几颗花椒,一块拍碎的姜,少量料酒,小火慢炖至猪蹄软烂,大概2个半到3个小时,自己尝试肉的软烂程度。
  • 8.小火炖的时候我还是喜欢放进砂锅里慢慢炖。
  • 9.实物汤汁看着比图片上的汤汁还白一点,也更诱人,图片老拍不好,无奈。
  • 10.这道菜菜猪蹄是主角,做一个自己喜欢的美味蘸料非常重要,只要蘸料做好了,想不美味都不行呢。炖好后的汤,舀到小碗里,加入适量的盐和小葱,喝一口汤,芸豆也是沙沙的,很好喝呢。
