鱼香茄子煲

Steps to make 鱼香茄子煲

  • 1.泡椒剁碎。
  • 2.豆办酱剁碎待用
  • 3.大蒜,生姜剁碎,芹菜切粒,葱切碎待用.
  • 4.木耳泡发后,切丝待用。
  • 5.胡萝卜切丝
  • 6.茄子洗净。
  • 7.切六cm长,2cm宽.
  • 8.锅里放油,将切好的茄条下入锅内炸至金黄.(注意,不能炸得太熟,不然下锅翻炒容易烂.)
  • 9.捞起.....
  • 10.用铲轻轻按压,将油控出.
  • 11.锅内留适量油,将大蒜,生姜,葱花炒香,再下入豆办酱和泡椒末炒香.
  • 12.......
  • 13.下入木耳丝和胡萝卜丝炒熟.
  • 14.将炸好的茄条放入锅内
  • 15.碗内放入生抽,糖,适量盐,味精,搅拌均匀.
  • 16.茄条倒入后,轻轻翻炒几下.
  • 17.将碗内调料倒入锅内,再加适量清水或者汤.
  • 18.翻炒几铲。
  • 19.再倒入芡汁
  • 20.再翻炒几铲
  • 21.将调好味的菜品盛入砂锅内
  • 22.撒入葱花和芹菜末
  • 23.加盖小火焖五分钟即可
  • 24.揭盖,香喷喷的鱼香茄子煲就做好了.
