麻辣腌黄瓜
“又是腌咸菜”,面对牢骚,我还是依然固我。

     怎么说呢,腌咸菜看似是小菜,可一日三餐如果没有了它,咱们还是很想念的;每天清晨就着小咸菜喝点热乎乎的白粥,吃点面条,就是就着吃面包或是煎蛋也是很搭的。

     话又说回来了,腌菜毕竟盐分高,不是健康的食品少吃为好。可见到黄瓜、莴苣,萝卜之类的蔬菜,就手痒,鼓捣鼓捣就又做成了咸菜。

     喜欢自己做点小腌菜,以至于成了一个小小的习惯。

    Steps to make 麻辣腌黄瓜

    • 1.红辣椒入清水锅,煮沸后关火,浸泡1小时。
    • 2.黄瓜洗净,切薄滚刀块。
    • 3.把黄瓜盛到干净的盆子里,撒上精盐,腌渍1小时。
    • 4.把泡软的红辣椒、生姜片放入蒜臼子(喜欢蒜香的可放几瓣大蒜)。
    • 5.用力把辣椒,姜片捣碎。
    • 6.把辣椒捣成泥,成粘稠状即可。
    • 7.篦掉黄瓜腌出的水分,也可用纱布包上黄瓜用力挤掉水分。
    • 8.撒上适量的麻椒,喜欢味重的可把麻椒研碎后再放。
    • 9.倒入白醋。
    • 10.挖入辣椒泥,放入量可根据口味适当增减。
    • 11.把黄瓜和佐料仔细拌均匀。
    • 12.把拌匀的腌黄瓜放置阴凉处,一天后即可食用。
    • 13.取出腌好的麻辣黄瓜,撒上熟芝麻或调入一点香油,拌匀后即可食用。
