糖醋排骨
糖醋排骨(Sweet and Sour Spare Ribs)起源浙江,是典型的一道浙菜。它选用新鲜猪仔排作主料,肉质鲜嫩,成菜色泽红亮油润。是糖醋味型中具有代表性的一道大众喜爱的特色传统名菜。

  • 仔排250g
  • 老姜半个
  • 大葱1只
  • 冰糖50g
  • 生抽2匙
  • 老抽1匙

Steps to make 糖醋排骨

  • 1.排骨切块放入锅中加姜片煮5分钟。
  • 2.将排骨冲洗干净沥干水分备用。
  • 3.锅里放少许油加入冰糖,小火炒至枣红色。(炒糖色一定要小火)
  • 4.糖色加入开水,倒入排骨翻炒上色。
  • 5.加入姜片和大葱。
  • 6.加入开水(刚好没过排骨),加入一大勺白糖,一大勺陈醋,一匙老抽调色,再加入两匙生抽调味。加盖小火煮20分钟。
  • 7.再加入一匙白糖,一匙陈醋,大火收汁,收汁要不断掂锅,翻动排骨,避免粘锅糊锅。
  • 8.装盘撒上葱花。
