蛋黄莲蓉月饼
一年一度的月饼季已拉开大幕,最近参加了新良烘焙大赛,有幸得到了新良面粉的试用!今天用的就是易小焙的广式月饼预拌粉来做的广式月饼!

Details of ingredients

  • 广式月饼预拌粉150克
  • 转化糖浆112克
  • 花生油38克
  • 白莲蓉馅300克
  • 咸蛋黄15个
  • 蛋液少许
  • 白酒少许

Steps to make 蛋黄莲蓉月饼

  • 1.咸蛋黄放入烤箱喷上白酒,180度烤5分钟
  • 2.白莲蓉馅分成每个20克左右,搓成圆球
  • 3.取一个莲蓉圆球压扁,中间放上一颗烤过的咸蛋黄
  • 4.用虎口慢慢收口
  • 5.再次搓圆成蛋黄莲蓉馅备用
  • 6.将转化糖浆、花生油倒入小盆中,充分搅拌均匀至乳化状态
  • 7.筛入一半广式月饼预拌粉
  • 8.用刮刀拌匀,静置30分钟
  • 9.接着再次筛入剩下的广式月饼预拌粉
  • 10.拌成软硬适当的面团,静置20分钟
  • 11.取20克左右的面团搓圆,压扁,中间放上准备好的蛋黄莲蓉馅
  • 12.把外面的饼皮慢慢爬着包住馅料收口
  • 13.放入月饼模具中
  • 14.压制成型
  • 15.排放在垫上油纸的烤盘上
  • 16.烤箱180度预热好,烤5分钟取出刷上一层薄薄的蛋液,再次放入烤箱烤15分钟
  • 17.烤至表面金黄色即可,冷却后密封保存,回油2-3天后食用
