蔓越莓蛋糕卷
喜欢做蛋糕卷,做法简单又不费时间~小五卷的方子加了酸酸甜甜的蔓越莓中和了下,用三能28×28烤盘不铺油布油纸一样做出美美的毛巾底。

  • 牛奶50g
  • 玉米油50g
  • 低粉50g
  • 细砂糖50g
  • 蔓越莓20g

Steps to make 蔓越莓蛋糕卷

  • 1.牛奶和玉米油倒入碗里,用蛋抽搅打。
  • 2.筛入低粉。
  • 3.用蛋抽不规则的搅拌没干粉即可。
  • 4.加入5个蛋黄(后蛋法做出的蛋糕细腻)
  • 5.用蛋抽不规则的划一字直到蛋糊细腻。
  • 6.蛋白里分3次加入白糖打成湿性发泡(我懒一次性加入的白糖)做蛋糕卷蛋白不能打的太硬不然卷的时候会裂。
  • 7.取1/3的蛋白霜放入蛋黄糊里。
  • 8.用蛋抽或刮刀快速拌匀。
  • 9.将蛋黄糊全部倒入蛋白霜里快速的翻拌均匀。
  • 10.加入蔓越莓干拌几下(蔓越莓提前用水泡一会,大的切小点)
  • 11.倒入烤盘轻轻震几下(表面不平可以用刮板抹平)
  • 12.烤箱提前预热150℃中层20分钟,出炉后从高处落下(时间温度仅供参)几分钟后蛋糕四周会和烤盘分离(如果没有就用手把四周扒一下)
  • 13.蛋糕上铺好油纸,把烤盘倒扣过来蛋糕片会掉下来。
  • 14.用油纸卷起两头拧紧定型。
  • 15.总是切的不平整。
  • 16.酸酸甜甜的好吃。
