花式糖霜饼干

  • 鸡蛋液20g
  • 低筋面粉130g
  • 蛋白8g
  • 糖粉50g
  • 粉色素1滴
  • 绿色素1滴

Steps to make 花式糖霜饼干

  • 1.黄油提前切成小快
  • 2. 放在室温软化,然后进行打发
  • 3. 加入糖粉,用打蛋器的打蛋头搅拌一下(无需插电),让糖粉和黄油混合一起,这样搅打过程中,糖粉不会到处乱飞,电动打蛋器先开低速打
  • 4.待糖粉和黄油混合后,开中速搅打,搅拌至体积变大,颜色发白(此过程大约需要2-3分钟左右)
  • 5. 分3次加入蛋液, 每加一次都要搅拌到蛋液完全与黄油融合
  • 6. 一次性的筛入低筋面粉
  • 7.用刮刀翻拌,揉成团,用保鲜膜包好,冷藏至少30分钟左右
  • 8.冷藏的时候正好做蛋白霜,准备好50克糖霜和8克蛋白
  • 9.将蛋白放入容器中,必须要无油无水,加入几滴柠檬汁,打发至粗泡,将糖粉分三次筛入蛋白中,每次都用打蛋器将糖粉和蛋白搅拌均匀
  • 10. 打到滴落的线条不容易变平整就可以了
  • 11. 打好的糖霜分成两份,一份滴入一滴粉色素搅拌均匀
  • 12. 另外一份放入绿色素搅拌均匀
  • 13. 分别装入两个裱花袋,并在出口处剪2mm的小口,千万不能剪大
  • 14.拿出冷藏好成型的饼干面团,案板上放上一张油纸,将面团放在油纸上,面图上再盖一层保鲜膜,擀成3mm--5mm左右厚
  • 15.擀好后,用花型饼干模具刻出形状
  • 16.烤箱提前预热180度,把做好的饼干放入烤盘中,饼干之间要留一点缝隙,让其受热更均匀,也不会让烤好的饼干黏在一起,然后放入烤箱,上下火,中层180度8-12分钟(或见饼干均已上色即可)
  • 17.始装饰吧!取一块饼干,想出装饰图案,涂画好后,将饼干放入通风处彻底晾干即可
