白玉冰皮月饼
冰皮月饼外观洁白如玉,口感细糯,Q弹有嚼劲,从去年就开始种草,今天终于拔草了。用的咏歌的方子,不用炼乳,更健康,此配方按1:1比例做50克13个的量

  • 粘米粉30克
  • 牛奶180克
  • 糖粉50克
  • 食用油20克
  • 豆沙320克
  • 椰蓉10克
  • 糕粉10克

Steps to make 白玉冰皮月饼

  • 1.取一个瓷碗,倒入牛奶,糖粉,植物油搅拌均匀
  • 2.倒入糯米粉,粘米粉,澄粉搅拌均匀
  • 3.再取一只盆子,把面糊过筛2次以上
  • 4.过筛好的面糊静置30分钟,然后盖上保鲜膜放入蒸锅,用大火蒸25分钟,在15分钟的时候掀开保鲜膜搅拌一下面糊再盖上保鲜膜继续蒸(注意不要烫到手)
  • 5.蒸面糊的时间分豆沙馅,每个25克,豆沙上滚一层椰蓉
  • 6.蒸熟的面团取出用筷子扒拉散开,帮助降温
  • 7.面团还有余温的时候带上一次性手套把面团揉光滑
  • 8.面团按25克一个分成13个
  • 9.取一个面团压扁,包上豆沙馅,像包包子那样包起来,捏一下收口
  • 10.面团抹一层糕粉,放入模具
  • 11.轻轻推动模具,把冰皮月饼扣在垫子上
  • 12.香浓的冰皮月饼,搭配高山茶,好吃又解腻
