Steps to make 西芹炒鱿鱼

  • 1.青椒洗净切丝。
  • 2.西芹洗净撕掉筋膜。
  • 3.切成片。
  • 4.鱿鱼的清洗方法之前菜谱里面有,请看下面的链接。
  • 5.处理干净后将鱿鱼斜切成花刀。
  • 6.将鱿鱼放沸水中焯水30秒。
  • 7.炒好水的鱿鱼就变成鱿鱼花卷了,捞出沥干水份。
  • 8.至锅热油。
  • 9.下红椒加少许食盐煸炒片刻。
  • 10.倒入西芹炒至断生后乘出备用。
  • 11.重新起锅热油下入姜丝。
  • 12.将鱿鱼倒入锅中爆炒片刻,加一勺料酒继续爆炒。
  • 13.调入少许生抽。
  • 14.将炒好的西芹和红椒倒入锅中煸炒均匀。
  • 15.加少许清水。
  • 16.一匙蚝油。
  • 17.翻炒均匀后即可出锅。不可炒至时间过长。全程大火爆炒,速度要快,这样炒出来的鱿鱼才不会柴。
