  • 1.精五花,本来想做日式叉烧肉的,买的味淋和清酒在路上未到,准备用经常用的卤水卤一下。取中间薄厚均匀的五花肉切下来。两侧煮个肉方,准备做扣肉。
  • 2.从下卷起。
  • 3.卷紧。
  • 4.用绳子捆紧实。这样煮好切片时不容易散。
  • 5.冷水下锅。
  • 6.水开多焯个两三分钟。
  • 7.电压力锅里适量盐,花椒,麻椒,小茴香,冰糖,辣椒,桂皮。
  • 8.适量生抽,老抽。
  • 9.加入足量的开水。
  • 10.炒锅里一点点油烧热,撒入一点红糖。
  • 11.放入焯过水的五花肉卷。
  • 12.小火把五花肉卷煎至上色。
  • 13.煎好的五花肉放入卤水中。
  • 14.选择牛羊肉程序,开始。
  • 15.时间到,排气开盖。诱人的五花肉卷完成。卤好不要立马拿出来,腌制三四个小时更入味儿。
  • 16.从卤水里取出,拆下绳子放保鲜袋里,冰箱冷藏一夜。
  • 17.冷藏好的五花肉卷。
  • 18.切成均匀的薄片。
  • 19.用烘焙纸隔层,用不完冰箱冷冻保存。食用时提前解冻,配面,配粉都不错。
