Steps to make 菊花酥

  • 1.150克面粉过筛,加入细砂糖和50克猪油,搓在一起,然后加放清水,和成一个软硬适中的面团。用保鲜膜盖上,静置半个小时。
  • 2.120克面粉加入60克猪油和成一个和上一步软硬相当的油酥,放到保鲜袋中。
  • 3.将第一步中油酥皮擀开,包入第二步中的油酥。
  • 4.擀成牛舌状,从一边卷起,口向下放置十五分钟。
  • 5.取一份松弛好的油酥皮,封口向上,大拇指从中间向下按下,四角向中间收成圆形,擀成圆片。
  • 6.包入豆沙馅。
  • 7.收好口,压扁。
  • 8.用刀均匀分开。
  • 9.用手逆时针或者顺时针的把切好的翻起来,中间刷上蛋液,放入烤箱250度烤十分钟左右。
