Steps to make 川味飘香踏板鱼

  • 1.准备材料。超市买来4条经师傅去皮去头的踏板鱼,洗净控干水分,用葱姜段,料酒,盐和少许胡椒粉入味
  • 2.小米辣切圈,葱姜蒜切末,泡椒切碎
  • 3.腌好的鱼用厨房用纸吸干水分,拍少许淀粉
  • 4.锅烧热入油烧热下入踏板鱼煎炸
  • 5.一面煎成金黄色再翻面煎另一面成金黄色盛盘控油备用
  • 6.锅入油,加一半葱和姜蒜末炒香,下泡椒和郫县豆瓣酱小火慢慢炒出红油,炒熟炒透。
  • 7.下入煎好的鱼
  • 8.加入适量水或汤烧开,加入鸡汤块,少许糖调味炖煮15分钟左右盛出备用
  • 9.锅中加入适量油,下入花椒小火温炸出香味,捡出花椒不用留油备用
  • 10.锅中花椒油烧热下入小米辣煸香,浇在踏板鱼上,撒上另一半葱花即成
