自制卤千张
千张,也就是我们说的豆腐皮,也有人叫它“百页”,anyway,都是指同一种豆制品食物,清炒或者卤煮味道都很不错,然而,我更多喜欢卤了后用来凉拌,主要是因为--方便啊,哈哈哈,晚上提前卤好,第二天切切拌了。

  • 蒜蓉少许
  • 凉白开水1小勺

Steps to make 自制卤千张

  • 1.准备这几样,这卤料包我家常备,方便啊。
  • 2.千张在大超市买的袋装的(卫生有保障些,哈哈,也有可能自己骗自己哈),冲洗干净后分成几大块。
  • 3.放入冷水锅里加小半勺盐焯一下(热水烧开后煮十几秒就可以)后捞出。加盐是为了去去豆腥味儿。
  • 4.另一口小煮锅里放入适量清水,卤料包一袋和拍扁的蒜块姜块,煮开。
  • 5.接着倒入老抽,量不一定,看到颜色深了就可以不倒了,中小火煮出五香味就行。
  • 6.然后把焯过水的千张放进去,小火煮开后加点盐,大约再煮2分钟即可关火让它浸泡上色入味了。
  • 7.调味料:萝卜丝、香菜、蒜头磨成蒜蓉。
  • 8.磨好的蒜蓉倒入一小勺凉白开水,陈醋、盐和少许卤千张的汁,再加香油和油泼辣子调匀后就成这么一小碗调料。
  • 9.卤好的千张切细丝(我这是浸泡了一个晚上的)。
  • 10.倒入调好的酱料和配料,拌吧。
  • 11.完成。
