大白菜肉卷

  • 肉糜250g
  • 香葱1根
  • 蒜头1瓣
  • 2片
  • 食用油少许
  • 生抽1匙
  • 红薯淀粉1匙
  • 蚝油1匙
  • 蛋清1只

Steps to make 大白菜肉卷

  • 1.大白菜洗净对切成两半。
  • 2.将菜叶焯一下水。
  • 3.投凉。
  • 4.菜梗剁碎加少许食盐腌制五分钟。
  • 5.稍微挤干水分放入肉糜中,加生抽食盐淀粉蛋清和两个鸡蛋容量的清水。
  • 6.朝一个方向搅拌上劲,也可以放些香菇木耳碎一起搅拌。
  • 7.取一片菜叶完全展开,将肉糜放菜梗这边,然后从下往上将菜叶卷成卷。
  • 8.码在盘中。
  • 9.上蒸锅大火蒸10分钟左右。
  • 10.蒸至时准备葱姜蒜。
  • 11.另取一小碗放一匙生抽一匙蚝油,一小匙淀粉。
  • 12.加适量清水调成芡汁。
  • 13.热锅热油下入姜蒜爆香。
  • 14.将蒸好的肉卷取出。
  • 15.蒸出来的汤汁与芡汁一起倒入锅中。
  • 16.勾芡,撒上葱花。
  • 17.将芡汁浇到肉卷上面即成。
