    Steps to make 秘制泡椒鸡爪

    • 1.鸡爪洗净去指甲,切开,先一分为二,再把有指头的那边一分为二。整个泡难入味。
    • 2.糟卤,姜条,泡椒,盐,糖,醋,混合,盐一茶匙,糖倆茶匙,醋一汤匙。(香醋陈醋都可以)。
    • 3.卤料煮开,倒入鸡爪,水开倒一汤匙料酒,一茶匙盐,煮十到十二分钟。我煮了十分钟,很脆。
    • 4.用冷水洗净后,经常换水,泡两个小时。怕麻烦就半小时换一次,或者水开小点不要关上。
    • 5.鸡爪控干水,泡进调好的汁水中即可,五个小时以上就可以吃了。不过越久越入味,也就越辣。
