  • 低筋面粉30g
  • 干酵母2g
  • 黄油22g,室温软化
  • 高筋面粉62g
  • 低筋面粉47g
  • 1g
  • 黄油6g
  • 泡打粉1g
  • 豆沙150g

Steps to make 萌货。小熊豆沙面包

  • 1.制做欧克皮,欧克皮的材料全部和一起
  • 2.揉成一个光滑的面团放保鲜袋里待用。此料量有点大,揉一个欧克皮,用不完,可减量或连做几种萌宠面包。放冰箱冷藏保存,但不要存放太长时间
  • 3.把主面团中除黄油外的所有食材按照底层液体、中层粉类、上层干酵母的顺序全部放入面包机桶里,选择和面程序20分钟
  • 4.揉成光滑的面团之后,加入室温软化的黄油,继续和面程序20分钟
  • 5.把揉好的面团放入干净的保鲜袋里,前端封口系紧,放入冰箱里发酵过夜10小时左右冷藏发酵的面团很细腻,成品口感好,多放两天也还是很柔软。急着做的话,直接室温发酵也是可以的。
  • 6.第二天拿出面团
  • 7.放在面板上按压排气
  • 8.先分出来一个48g的面团,再把其余的平均分成6个,每个面团大约为40g。盖上保鲜膜,松弛20分钟。
  • 9.取一个面团按扁,中间放入25g豆沙,裹入面团中
  • 10.捏紧封口,然后光滑的部分朝上
  • 11.全部做好放置到铺好油纸的烤盘中,注意盖保鲜膜,防止风干
  • 12.下面开始做小熊的耳朵,把48g的那个面团,平均分成12个3g的面团
  • 13.摆放到相应的位置,用主面团压好耳朵
  • 14.开始做嘴巴的部分,取一块欧克皮,擀成1毫米的厚度,然后用三能中号裱花嘴,切割出6个圆形
  • 15.欧克皮背面刷水(一定要轻柔,容易变形),粘到主面团上,进行最后的发酵
  • 16.发酵好之后,开始预热烤箱,上下管180度。烤制20分钟左右,上色后盖锡纸
  • 17.烤好之后立即取出,在晾网上晾凉。
  • 18.然后在欧克皮上刷一层融化的白巧,粘上奶粉,再用融化的黑巧克力画出五官就可以了
  • 19.萌萌滴小熊面包完成了
