熔岩巧克力蛋糕

  • 黄油100克
  • 60克
  • 低筋面粉30克
  • 鸡蛋3个
  • 黑巧克力70克
  • 淡奶油70克

Steps to make 熔岩巧克力蛋糕

  • 1.先做甘纳许部分,将淡奶油倒入奶锅中,小火加热,大约60度左右就可以了,将巧克力放入淡奶油中,不断的搅拌至融化,
  • 2.装入裱花袋中,放入冰箱冷藏备用。
  • 3.蛋白与蛋黄分离,
  • 4.黄油软化加巧克力,搅拌均匀,最好是将其隔水软化,这样不至于温度过高,造成油水分离,
  • 5.蛋白分3次加入细砂糖,打发至7分发
  • 6.再加蛋黄继续打发至8分发
  • 7.提起打蛋器,滴落的糊糊会在打蛋盆里留下痕迹,且不会马上消失为好,
  • 8.分次加入巧克力与黄油的融化物,拌匀
  • 9.筛入低粉,拌匀
  • 10.装入裱花袋
  • 11.先挤1/3的面粉糊,再挤甘纳许,最后再挤上面粉糊,
  • 12.190度,中层,烤8--10分钟
  • 13.烤好后,取出
  • 14.倒过来装盘,切开,就会流出软软香香的巧克力哦。
