眼看农历新年就要到了,从这个月开始各种中西节日接踵而来,喜庆的气氛也愈加浓烈,看了好多其他朋友的菜谱,今天我也来做一次红烧狮子头吧,也算是考察学习结果吧,呵呵,朋友们多指教

  • 山药约100克
  • 鸡蛋6颗
  • 炖肉香料随意

Steps to make 红烧狮子头

  • 1.准备好所有材料,五花肉剁成肉馅,肥瘦比例3:7,山药去皮剁成泥,葱姜切末,6颗鸡蛋5颗煮熟去皮备用。
  • 2.肉馅中打入一颗生鸡蛋,倒入葱姜末,倒入山药泥,加2小勺盐,一小勺五香粉,一大勺XO酱,2大勺生抽,1大勺老抽,朝同一方向搅匀上劲。
  • 3.带上一次性手套,手中放2大勺肉馅,铺平,肉馅上放一颗煮熟的鸡蛋,慢慢包起来,包成丸子,让肉馅均匀的裹在鸡蛋上。
  • 4.如图将5个鸡蛋全部包好备用。
  • 5.锅中烧宽油,油温七成热时将包好的丸子下锅炸,稍微定型后调小火,炸至金黄色捞出备用。
  • 6.另取一个砂锅,加入高汤,没高汤清水也可以,倒入炖肉料(八角、草果、香叶、肉蔻、丁香等)加入老抽生抽料酒烧开后,下入炸好的丸子,大火烧开后改小火煮30分钟。
  • 7.30分钟后丸子捞出装盘,令取一个锅,盛一些炖丸子的汤烧热,用少许水淀粉勾芡后淋在丸子上即可。
  • 8.装盘后可做一些装饰,看看成品图吧。
