过油虾
买了活虾,个头不是很大,于是就直接用油炸了吃了,这种快速过油后的虾,外皮酥脆,带皮都可以吃。而且肉质依然鲜嫩,真正的外酥里嫩。

Steps to make 过油虾

  • 1.活虾清洗后带水冰箱冷藏,让其处于休眠状态以便处理。
  • 2.剪掉虾枪,挑出沙包,剪掉虾须虾腿,跳出虾线。
  • 3.处理好了再洗净干净。
  • 4.捞出控水。
  • 5.加盐和胡椒粉调味,拌均匀。
  • 6.加一勺干淀粉拌均匀,薄薄的挂一层即可,淀粉不要多。干淀粉要等油烧热时拌,拌好直接下锅。这样炸出来的虾外皮非常酥脆。
  • 7.菜籽油烧到五成热入锅炸,1斤虾最好是分两次炸,这样对油温的影响不大。
  • 8.待虾变色后捞出,等油温升到6成热,再入锅复炸20秒即可出锅。
