芝麻牛奶饼干
看见网上好多人抱怨泡打粉有铝的成分,对身体不好,但有些点心总是要适量地用,就从网上买了两罐无铝泡打粉,价格比普通的贵了许多,但还可以忍受,就开了一罐试试做芝麻饼干,从表面上来看,与普通的泡打粉区别不大,从心里上说,可能会感到安全健康些罢了。

  • 牛奶1/2杯
  • 自发低筋面粉1+1/4杯
  • 无铝泡打粉1/3小勺
  • 白糖1/2小勺
  • 精盐1/8小勺
  • 黄油3大勺
  • 猪油3大勺
  • 自发低筋面粉2/3杯
  • 精盐约1/2小勺

Steps to make 芝麻牛奶饼干

  • 1.把牛奶1/2杯、自发低筋面粉1+1/4杯、无铝泡打粉1/3小勺、白糖1/2小勺、精盐1/8小勺放入面包机,搅拌成团,停机,加入切了片的黄油,再开机,搅拌成面团。
  • 2.置一大碗,涂一层菜油,放入面团,盖上薄膜,放在温暖的地方醒发60分钟。
  • 3.时间到后放在案板上搓几下去气泡,再盖上薄膜让其松弛10分钟。
  • 4.再用另一碗,加入猪油3大勺、自发低筋面粉2/3杯,揉成团。
  • 5.让大面团包住油面团。
  • 6.收好口,捏紧。
  • 7.收口向下,擀成长舌状。
  • 8.叠三折。
  • 9.再擀成长方形。
  • 10.又叠三折。
  • 11.再擀成长方块,约3毫米厚,其实厚点薄点关系不大,厚点就相对酥一点,薄点就相对脆一点。
  • 12.面上撒上芝麻,用擀面杖在上面滚一下,让芝麻嵌进去,再翻另一面如法泡制,两面都有芝麻了,在第二次撒入芝麻时再用手指捏着一点点精盐撒在表面。
  • 13.用模子压出饼坯来,预热烤箱350°F。
  • 14.把面坯放在烤盘上,让它们饬发20分钟,用Bake功能350°F,12分钟,Broil 功能低档Low 3分钟,如果烤箱不备Broil 功能,可考虑延长时间3分钟左右,总之,无论是上火还是下火,时间快到前开箱灯,勤观察,把饼干烤至不太深的金黄色就可以了。
