烤鸭白菜汤
这道菜里的烤鸭是地地道道的北京全聚德的,不过用的是烤鸭架。烤鸭白菜汤是我跟婆婆学的,每次我们去吃烤鸭都是鸭架拿回来自己弄,这种做法鸭肉软烂脱骨,白菜清爽解腻,最棒的就是那个汤,很鲜....很香.....又不腻......

Steps to make 烤鸭白菜汤

  • 1.烤鸭架洗净,斩段
  • 2.放入高压锅里,放入葱段、姜片,花椒大料装料盒里也放到锅里
  • 3.加水,水量以刚和鸭架持平为好。高压锅盖好盖子,压20分钟即可
  • 4.压好的鸭架汤
  • 5.大白菜顺着切粗丝洗净,捞出控水
  • 6.炒锅里什么都不加,锅热了放入白菜干煸,去去白菜的生味,炒到白菜微蔫
  • 7.倒入鸭架和鸭架汤,大火烧开,加入盐(由于喝汤,盐的量要掌握好)
  • 8.汤变奶白色,白菜很软烂即可关火出锅。
