岭南榄角蒸鳊鱼
鳊鱼除了最普通的清蒸,还有独具岭南乡土特色,风行于珠三角一带的“榄角蒸鳊鱼” ,这是一道典型的农家风味,在顺德一带尤其流行。榄角本身既是惹味配料,不但可去腥,同时又能提升鱼的鲜味。

我没专门去买榄角,家里有瓶橄榄菜,就用这橄榄菜里的橄榄切来做了。

橄榄菜是潮汕地区所特有的风味小菜,取橄榄甘醇之味,芥菜丰腴之叶煎制而成。

  • 香葱60克
  • 橄榄5粒
  • 100毫升
  • 酱油20毫升

Steps to make 岭南榄角蒸鳊鱼

  • 1.主要材料图。
  • 2.锅中放清水和蒸架,将水煮开。
  • 3.将姜丝和榄角放在鱼肚里和鱼面上,上锅蒸7分钟。
  • 4.鱼蒸好了,鱼汤有腥味,把鱼汤滗到碗里。
  • 5.把葱末放到鱼身上。
  • 6.将油烧热。
  • 7.将热油浇到香葱上。
  • 8.不能吃这么多油的,再把油滗出。
  • 9.把鱼汤放入锅中,加入酱油同煮。
  • 10.将煮好的鱼汤浇到鱼上。
  • 11.请大家来品尝这道岭南风味的榄角蒸鳊鱼。
