  • 料酒2勺
  • 米醋2勺
  • 高度白酒2勺
  • 蚝油2勺

Steps to make 生卤虾

  • 1.葱姜蒜香菜小米辣,花椒大料。
  • 2.葱姜蒜小米辣和香菜,切末。
  • 3.鲜虾洗干净,剪掉虾须虾脚,剔除虾线。腌制时间短的话,可以将虾身上的虾皮扒掉,便于入味。如果能腌制一夜,就可以不用扒皮。
  • 4.虾处理好后再次清洗,然后倒入高度白酒,浸泡二十分钟。
  • 5.浸泡高度白酒以后,将酒倒出。我记得老妈腌虾的时候,不放酒,味道也不错。不喜欢的朋友,可以不放。
  • 6.将葱姜蒜小米辣香菜末,放入虾中。加白糖2勺提鲜。
  • 7.放入花椒大料。
  • 8.加食盐3-5勺。腌制时间短,着急吃的话,就多放一点盐。腌制时间长,可以过夜的话,就少放一点。
  • 9.加入料酒2勺。
  • 10.海鲜酱油4-5勺。一定要海鲜酱油。
  • 11.蚝油2勺。
  • 12.米醋2勺。
  • 13.搅拌均匀后,加入凉白开水,浸泡过所有食材。
  • 14.盖上保鲜膜,在冰箱冷藏一夜。
