Steps to make 山寨水煮鲈鱼

  • 1.鲈鱼洗净斜切下两边的肉
  • 2.鱼肉片成薄片,不必太薄。
  • 3.鱼骨切大段
  • 4.鱼骨加白酒腌二十分钟
  • 5.鱼片加少许盐、白酒和黑糊椒粉腌半小时。
  • 6.腌好的鱼片
  • 7.加少许生粉拌匀
  • 8.青瓜切粗条,豆芽洗净。
  • 9.姜洗净切片,蒜剥好
  • 10.起油锅,爆香姜片
  • 11.倒入鱼骨煎下
  • 12.加适量水,加当归,煮滚后转小火再煮十分钟,至汤发白。
  • 13.盛在大碗里,汤备用
  • 14.青瓜焯下水,捞起盛在碗里
  • 15.豆芽焯水捞起盛在青瓜上
  • 16.起油锅,爆香姜片和蒜粒
  • 17.加入豆瓣酱
  • 18.倒入鱼汤煮一会儿
  • 19.捞起姜片蒜粒
  • 20.加入鱼片,煮滚后盛在豆芽碗里
  • 21.起油锅,爆香红辣椒,趁热淋在鱼片上,就可上桌了。
