法式焦糖杏仁酥
法式焦糖杏仁酥,是法国比较流行的一款酥饼,酥酥的浓香脆饼底,结合上层有嚼劲感焦糖杏仁片,美味不停口。(为了能更清楚食材明细,我把饼底材料称为A、焦糖杏仁材料称为B)

  • 低筋面粉250克
  • 黄油125克
  • 糖粉30克
  • 蛋黄1个
  • 杏仁片75克
  • 淡奶油50克
  • 砂糖75克
  • 麦芽糖25克
  • 蜂蜜25克
  • 黄油50克

Steps to make 法式焦糖杏仁酥

  • 1.将材料A的黄油室温软化,用打蛋器打至黄油体积蓬松。
  • 2.加入材料A的糖粉,继续搅打均匀。
  • 3.加入一个蛋黄打均。
  • 4.筛入低筋面粉。
  • 5.按压成光滑面团。
  • 6.将面团擀开成比模具大的面片。(最好铺上保鲜袋来擀面团比较好操作)
  • 7.将面片放入8寸派盘里,去掉多余的边缘,并用叉子将面胚均均搓出小孔,以防烤制时面饼鼓起。预热好烤箱180度。
  • 8.将饼底送入烤箱中层,用180度烤20分钟取出。
  • 9.取出烤好的饼底放一边。(趁在烤饼底时间来煮制焦糖杏仁馅)
  • 10.将材料B除杏仁外,放入奶锅里,开火煮至焦糖有点金黄色。
  • 11.放入杏仁片拌匀关火。
  • 12.将焦糖材料倒入烤过的饼底上铺平,再放回烤箱用180度再烤15分钟至焦糖变成褐色完成。
  • 13.成品,出炉凉却。
  • 14.切块食用,美味无比。
