更简单,更好吃 | 无添加牛轧糖进阶版
牛轧糖由法文Nougat翻译而来,意思是烘烤后的坚果,入口香甜有股浓浓的奶香。市面上大多烘焙爱好者都喜欢用成品原味棉花糖来制作牛轧糖,因为制作工艺极其简单,今天我给大家带来一款个人比较喜欢的以“fluff棉花糖”作为原料的牛轧糖,它有3个优点:
1,节省材料;
2,甜度适中,口感绵软,椰蓉的加入更加新颖别致;
3,传统棉花糖配料复杂,含有很多添加剂,此款无添加;

  • 棉花糖浆(焦糖味)110g
  • 黄油6g
  • 安佳全脂奶粉20g
  • 花生100g

Steps to make 更简单,更好吃 | 无添加牛轧糖进阶版

  • 1.100克红皮小花生放入烤箱120度烤20分钟。小提示(红皮有些开裂就基本烤好了)
  • 2.用手搓去外皮
  • 3.用平底不粘锅全程开小火,先把6克黄油先融化一些分开距离再倒入110克fluff棉花糖浆不停搅拌至混合均匀看不到黄油液体
  • 4.接以上再继续搅拌至糖浆变得有点粘稠拉丝状态即可
  • 5. 倒入花生继续搅拌,再倒入奶粉离火搅拌均匀即可
  • 6.提前准备2张28厘米左右的烘焙油纸,再倒入油纸上
  • 7.表面再铺上另外一张油脂纸,用擀面杖轻轻推压成厚度为8毫米左右的面饼,再放入冰箱冷藏30分钟左右
  • 8.取出冷藏的牛轧糖撕开油纸不粘了即可马上切开
  • 9.整齐的切好每一块
  • 10.切好后加入椰蓉包裹
  • 11.选好包装纸包好
  • 12.温馨小贴示:不用包装纸也可以用油纸包装,用白色的油纸包装好也贴心!
