“小鲜肉”餐包
这款面包的造型即简单又别致,烤好后的成品象一朵朵花一样绽放,看起来很惊艳,吃起来口感也特别好。

  • 高粉380克
  • 黄油58克
  • 牛奶160克
  • 细砂糖50克
  • 酵母粉5克
  • 鸡蛋1个
  • 蛋黄1个
  • 6克

Steps to make “小鲜肉”餐包

  • 1.牛奶加热到80度,与黄油、细砂糖混合。(加热牛奶是为了消除牛奶里阻碍酵母活性的物质)
  • 2.充分搅拌至糖和黄油熔化。
  • 3.放至温热(约42度左右),加入酵母粉搅匀,静置5分钟。
  • 4.把以上步骤3与高粉、盐、鸡蛋、蛋黄一同放入面包机中搅拌成均匀光滑的面团(无需手套膜的生成),放入容器中进行发酵。
  • 5.发酵至2--2.5倍大时取出排气,等分成36小份。
  • 6.分别滚圆,然后3个一组摆放在玛芬模具内,放温暖湿润处进行二次发酵。(模具事先刷油,以方便脱模。)
  • 7.在发酵好的面团顶部撒上香肠和香葱粒。
  • 8.烤箱预热,190度10分钟左右至表面金黄即可。(我用180度烤了15分钟左右,在出炉后趁热又刷了一层油来增强色泽)
