斑斓戚风
戚风蛋糕组织膨松,水分含量高,味道清淡不腻,口感滋润嫩爽,是目前最受欢迎的蛋糕之一。
虽然戚风蛋糕非常松软,但它却带有弹性,且无软烂的感觉,吃时淋各种酱汁很可口。另外,戚风蛋糕还可做成各种蛋糕卷、波士顿派等。

  • 植物油40克
  • 牛奶40克
  • 斑斓香精3滴

Steps to make 斑斓戚风

  • 1.准备材料
  • 2.准备无水无油的盆,把鸡蛋的蛋白和蛋黄分离,蛋黄中加入白砂糖A
  • 3.再蛋黄盆中加入植物油(无气味)
  • 4.再加入牛奶充分搅拌均匀
  • 5.再在筛入低筋面粉搅拌均匀,不要过度搅拌,避免起筋
  • 6.蛋白中加几滴醋,用电动打蛋器打到粗粗加入白砂糖B,分三次加入,打到干性发泡,打蛋头提起尖头不塌
  • 7.把蛋白糊分三分之一到蛋黄中,翻拌均匀
  • 8.再把混合好的面糊倒入剩下的蛋白糊里,继续翻拌均匀
  • 9.把翻拌好的面糊分一半出来
  • 10.再另一半面糊滴入斑斓香精翻拌均匀
  • 11.把两份面糊分别倒入同一个模具中,震出大气泡
  • 12.烤箱预热175度 上下火 40分钟 烤制好倒晾凉
