Steps to make 苏法芝士蛋糕

  • 1.奶油芝士从冰箱拿出回温,隔温水打至光滑无颗粒。
  • 2.分次加入三个蛋黄,搅拌均匀。
  • 3.依次加入牛奶和盐,拌匀。
  • 4.筛入低粉和栗粉,像炒菜那样拌匀,蛋黄芝士糊就做好了。
  • 5.蛋白中加入几滴白醋,分三次加入糖,打至中性发泡;打蛋白时就可以给烤箱预热,160度预热10分钟。
  • 6.分两次与蛋黄芝士糊混合,注意搅拌时不能划圈圈,仍然像炒菜那样,注意将底部的部分翻上来,一定要拌匀。
  • 7.在8寸活底圆模内壁涂上一层色拉油,用锡纸包住底部,放入烤盘,烤盘内注入冷水,水高1厘米左右,放入预热好的烤箱,烤45分钟即可。
  • 8.蛋糕烤好后,立即出炉冷却,冷却后脱模,放入冰箱冷藏4小时以上;专业的还要在表面抹上镜面果胶,自己吃就那么多讲究了,嘿嘿……不要说我懒啊!
