桂花糯米藕
桂花糯米藕,油润香甜,软糯Q脆,桂花香气浓郁,在我看来简直就是莲藕的最美味的吃法。
在江南它是最有人情味的街头小吃之一,可在北方却很少见到。几年前单位附近的市场上忽然出现了一家,买来一尝——真好吃!后来竟不见了。

想要吃,只好自己做。



如今正是莲藕大量上市的季节,左吃右吃,千万别忘了桂花糯米藕! 不仅美味,而且营养、滋润,非常适合秋天食用。

很多人都做过,做法有繁有简,正宗地道似乎要要先煮后蒸加浸泡等等,为了让莲藕充分入味,工序还是比较繁琐的。

今天介绍一个最简单的做法,非常适合在家制作,味道也不差哦!

Steps to make 桂花糯米藕

  • 1.糯米提前洗净,清水浸泡2、3小时以上;
  • 2.莲藕洗净,用钢丝球刮下外面的一层薄皮;
  • 3.在莲藕的一端切下一小段,露出内部的小孔;
  • 4.将糯米塞进莲藕的孔中,可以借助筷子或竹签,塞满即可,不可太紧实,煮过后米还会膨胀;
  • 5.盖上切下来的小块莲藕,用牙签固定;
  • 6.放进高压锅中,,加入适量清水(没过莲藕即可)和冰糖,盖上锅盖,大火煮至上汽,改小火压制30分钟关火;
  • 7.待自然排气后打开锅盖,加入大枣和枸杞,再次开小火,不加盖慢炖至汤汁粘稠;
  • 8.取出莲藕和汤汁,冷却到室温后,覆上保鲜膜入冰箱冷藏过夜;
  • 9.吃的时候切件摆盘,淋上汤汁和一大勺糖桂花即可。
