酱烧牛腩

  • 小米辣两个

  • 冰糖粒20粒
  • 豆瓣酱一大勺
  • 淀粉一小勺

Steps to make 酱烧牛腩

  • 1.牛腩切成大概3~4厘米厚的方块,清洗干净,起锅烧水把牛腩块放进去,加一点胡椒粉和几片香叶几粒花椒,有姜或其他调味食材的边角料也可以一起放进去,就是起到去膻味的都可以放进去。
  • 2.焯水5分钟,把浮沫撇清。
  • 3.捞出来清洗干净粘在肉块上的浮沫,沥干水份。
  • 4.起锅烧油,下一把冰糖粒。
  • 5.中火,把冰糖粒熬至琥珀色。
  • 6.大火把沥干水份的牛腩块放进去。
  • 7.翻炒至上色。
  • 8.准备好调味食材,喜欢吃辣的可以多下几个小米辣。
  • 9.把调味食材和一勺豆瓣酱放进去一起翻炒。
  • 10.翻炒到豆瓣酱出香味,把几粒花椒和几片香叶放进去,倒一点生抽,胡椒粉适量,继续翻炒。
  • 11.转入高压锅中,加两碗清水(平时盛饭的碗),盖上锅盖。
  • 12.大火烧开3分钟转中小火烧15分钟,关火后焖半小时。
  • 13.打开锅盖。
  • 14.倒回炒锅中,这个时候试一下味道,因为豆瓣酱等调味品都有咸味,之前就没有下盐,试一下如果味道偏淡了就下一点点盐。
  • 15.大火烧至酱汁收得差不多了,下小半碗淀粉水。
  • 16.让酱汁更加浓稠,关火。
  • 17.装盘,酱烧牛腩,入味,酱香十足,白米饭来一大碗吧。
