酱肘子
今天做的酱肘子很简单,问我为什么总做肘子呢?
原因有二:
一是我做的肘子肥而不腻,色香味俱全。
二是猪皮营养丰富,还是美容食品。经常食用猪皮或猪蹄有延缓衰老和抗癌的作用。因为猪皮中含有大量的胶原蛋白,能减慢机体细胞老化。经常食用肉皮,可使皮肤丰润饱满,富有弹性,平整光滑,防瘪减皱,靓你肌肤,美你毛发。

  • 猪前肘子1500克
  • 大葱1根
  • 生姜1小块
  • 精盐2茶勺
  • 八角1粒
  • 花椒20粒
  • 桂皮1块
  • 草果1个
  • 黄酒2茶勺
  • 生抽60g
  • 老抽30g
  • 冰糖30g
  • 香叶2片

Steps to make 酱肘子

  • 1.将猪前肘洗净剔骨;
  • 2.放入开水锅中焯十分钟;
  • 3.捞出来轻松拔毛清洗干净
  • 4.锅中放油,放入冰糖,中小火翻炒冰糖,一直不停的划炒;
  • 5.冰糖冒泡时关火放入猪前肘,均匀的把猪前肘挂上糖色;
  • 6.把水埋住猪前肘,大火烧开后改为小火炖2个小时左右;
  • 7.小火炖制两小时左右,肘子已经酥烂入味了;
  • 8.中大火收汁,用汤勺把汁不停的浇在肘子上;
  • 9.肘子肉晾凉后,连皮带肉卷成圆筒状,用保鲜膜紧紧包裹起来;
  • 10.放入冰箱冷藏一晚,使其定型,吃的时候切片装盘即可。
