Steps to make 南瓜萝卜粉丝烧麦

  • 1.南瓜洗净,切块,蒸熟
  • 2.蒸好的南瓜捣成泥
  • 3.加入面粉
  • 4.加水,和成柔软的面团,饧面十分钟。这次的南瓜水分少,特别面,看,和好的面团上能看到很多南瓜小颗粒,吃时味道格外浓郁。
  • 5.粉丝冷水泡软
  • 6.切成小段
  • 7.白萝卜洗净,擦成细丝
  • 8.攥干,(萝卜汁留着,做萝卜蜂蜜水)
  • 9.攥干的萝卜丝用刀粗略剁几刀
  • 10.干虾仁反复冲洗几次,泡一会,去去盐分
  • 11.干虾仁沥干水分,切小粒,不要切的太碎
  • 12.白萝卜丝、粉丝、虾仁丁放到容器里,再加点葱姜末、生抽、盐、十三香、熟豆油
  • 13.拌匀,即成烧麦馅
  • 14.饧好的面团搓细长条
  • 15.分割成一个个小剂子
  • 16.再一一按扁
  • 17.擀成饺子皮
  • 18.再擀薄边缘,尽量擀出花边,我第一次做,烧麦皮擀的还不到位
  • 19.取一个烧麦皮,放入适量馅
  • 20.用虎口处将烧麦皮捏起来,捏成肚大脖细的花瓶状
  • 21.将花边稍稍整理,向外延展一些
  • 22.包好的烧麦排放在抹了油的蒸帘上,每个点缀一粒枸杞,开大火蒸,上汽后蒸十分钟就熟了
