Steps to make 抹茶奶油布丁慕斯,冰爽软滑,奶香甜蜜,炎热夏日的超赞小甜品。

  • 1.吉利丁片5克,提前10分钟放冰水里软化备用。白砂糖25克、抹茶粉8克,先放一起搅拌均匀。
  • 2.淡奶油100克,分次加入混合好的抹茶粉里,搅拌均匀。
  • 3.搅拌至抹茶完全融化后放一边备用。
  • 4.牛奶300克、炼乳30克,放一起加热至60℃左右,边缘微微冒泡。记住要不停搅拌,不然炼乳会焦掉。
  • 5.取出软化好的吉利丁片,挤干水分。放入牛奶里,搅拌至吉利丁片完全化开。
  • 6.加入准备好的抹茶糊,搅拌均匀。
  • 7.搅拌均匀后过筛一下。
  • 8.把过筛好的抹茶牛奶液,放在一个放冰水的盆里降温,这样操作待会做出来的抹茶布丁,不会产生抹茶沉淀。
  • 9.等液体温度降到30度以下就可以了,或者用手指试一下温度,是凉的就行了。再过筛一下,倒入准备好的杯子里,放冰箱冷藏5小时定型。
  • 10.等布丁定型后,我们准备奶油层。淡奶油100、白砂糖10克,打发至6-7分发泡状态,微微稠密的状态就行了。
  • 11.把打发好的淡奶油,倒在布丁的上面,抹平奶油即可。
  • 12.撒一点抹茶点缀一下,抹茶奶油布丁慕斯完成。
  • 13.入口即化的奶香,清新的淡淡茶香。
