【番茄配方】万圣节疯狂派对系列——万圣节南瓜面包
万圣节即将到来,喜欢烘焙的朋友做几道应景的“作品”那是一定要的
万圣节里最常见也是最传统的就是用南瓜做各式美食。南瓜派、南瓜饼干、南瓜面包这都是万圣节应景的烘焙美食。虽然万圣节不是中国传统节日,但是最近便宜的不像话的南瓜需要我们来拯救它,不用南瓜做几道菜简直就简直了.......
废话不多说,外形应景口味清淡的南瓜面包送上,有木有一丝万圣节的气氛呢?

  • 高筋面粉250g
  • 南瓜泥150g
  • 水加碱30g+10g
  • 细砂糖25g
  • 酵母3g
  • 安佳黄油15g
  • 巧克力笔1支
  • 3g

Steps to make 【番茄配方】万圣节疯狂派对系列——万圣节南瓜面包

  • 1.先把南瓜泥和面粉,盐,糖揉搓均匀,然后慢慢加入30g左右的水和酵母(南瓜泥含水量不一,所以要根据南瓜泥的含水量调整水的用量)
  • 2.后油法,手工或者面包机厨师机揉面到完全扩展阶段,滚圆后进行第一次发酵(参考帖子:手工揉面)
  • 3.一次发酵到两倍大小后,分割成18个每个26g左右的剂子,滚圆松弛15分钟
  • 4.整形成橄榄形,三个为一组
  • 5.三个中间蘸一点水捏合在一起
  • 6.放入烤盘
  • 7.二次醒发放到烤箱里,再放一碗开水保湿,大约40-60分钟发到两倍大小左右
  • 8.插入一个南瓜子装饰
  • 9.180度烤制15-20分钟左右即可
  • 10.巧克力笔用热水融化一下
  • 11.在放凉的南瓜包上画上装饰造型
