花式冰皮月饼
中秋将至,做点月饼烘托一下节日的气氛吧!
冰皮月饼口感清爽,相对来说也更加健康;对制作者来说,也更容易造型。
第一次,做了12个,一会儿就被消灭光了,女儿霸占了大半,因为对她来说,可爱的造型是她无法拒绝的理由!
所以,这一次,又多做了一半!销路依旧很好!为了应景,捏了只兔子,玉兔来喽!

  • 澄粉40
  • 食用油40g
  • 牛奶360g
  • 糖粉40g

Steps to make 花式冰皮月饼

  • 1.准备好要上锅蒸的材料
  • 2.牛奶中倒入糖粉、植物油搅拌均匀
  • 3.各类粉过筛入牛奶中搅拌均匀
  • 4.拌好的面糊静置半小时
  • 5.上蒸锅蒸熟(蒸的时候要包上保鲜膜,我有个锅盖正合适就用这个了)
  • 6.蒸好的面糊(在蒸的过程中,要搅拌一两次)
  • 7.蒸好的面糊凉透之后就是月饼的皮了,用手揉一下,皮会更顺滑
  • 8.蒸熟的紫薯过筛成紫薯泥
  • 9.紫薯泥中加适量的蒸熟的面糊,揉匀
  • 10.取适量的糯米粉炒熟(这个可以防粘手)
  • 11.50g的月饼,30g的面团,20g的红豆沙,称好揉成球
  • 12.手上沾上熟的糯米粉,把面团按扁,放上红豆沙
  • 13.收紧口子
  • 14.把月饼模里面一圈都抹上手粉,当然单片的盖子也需要上粉
  • 15.把刚才包好的面团放进磨具
  • 16.盖上盖子,轻轻一压即可
