  • 鲈鱼1条

  • 生姜5g

  • 胡椒粉2g
  • 3g
  • 生抽5ml
  • 辣椒油10g
  • 红辣椒10g
  • 鸡蛋清1个
  • 香菜末1勺

Steps to make 酸菜鱼

  • 1.食材备好
  • 2.鱼清理干净后用开水冲泡一下,这样一来可以去腥,二来可以去掉鱼皮上面那种黏黏的物质
  • 3.把鱼肉切成片,用清水涮洗一下血水
  • 4.鱼片放进盆子里加入料酒,胡椒粉,蛋清,生粉搅拌均匀腌制10分钟
  • 5.鱼头,鱼骨头倒上料酒,葱姜腌制10分钟
  • 6.酸菜准备好
  • 7.葱姜蒜,辣椒切好备用
  • 8.炒锅倒入适量菜油烧热放入葱姜蒜辣椒煸出香味
  • 9.放入酸菜翻炒片刻,让酸味炒出来
  • 10.放入鱼头鱼骨翻炒变色
  • 11.加入一大碗水烧开并且加入一勺辣椒油
  • 12.加点盐,和酱油调味
  • 13.酸菜汤锅煮沸后倒入腌好的鱼片
  • 14.倒入鱼片搅散大火煮5分钟即可
  • 15.另起炒锅倒入适量油放入花椒炸香
  • 16.把热花椒油趁热浇至酸菜鱼表面
  • 17.撒点香菜完工
