自己动手熬一锅麦芽糖吧
还记得小时候,吃麦芽糖的样子吗,拿着两根小棍挑着一团麦芽糖搅啊搅,心急的搅不了两下就含到嘴里,三两下就吃到肚里,只好含着棍子看别的同学,变魔术般的把麦芽糖从琥珀色搅成白色。。。。今天我们也一起重温下这甜蜜的回忆吧。

Steps to make 自己动手熬一锅麦芽糖吧

  • 1.将小麦种子泡到种子完全吸收水分
  • 2.天冷发的很慢,找一个可漏水的篮子,小麦尽量平铺不要重叠,每天浇水,放在避光的地方
  • 3.整整发了十天,麦芽大概有6厘米长的样子,嫩黄嫩黄的,发麦芽地过程一定要避光,据说是麦芽变绿色会消耗里面的酶
  • 4.把麦芽剪碎在放到料理机尽量打碎,一定要剪碎点,不然麦芽的根须会缠到料理机的刀片上
  • 5.弄碎的麦芽掺到煮熟的糯米饭里,放烤箱里,发酵功能发5个小时
  • 6.发酵好了
  • 7.用布袋滤出渣滓
  • 8.这是滤出渣滓后留下的糖汁
  • 9.选一个口径大的锅这样水分蒸发快,开大火我是用两口锅一起熬到锅里只剩一半,在合在一个锅子里熬
  • 10.另一口锅,一起咕嘟
  • 11.两口锅合一起熬
  • 12.接着熬
  • 13.很漂亮的糖色吧
  • 14.接着熬
  • 15.差不多了,熬了2个多小时
  • 16.趁热装瓶
  • 17.甜蜜蜜
  • 18.大功告成,一定要趁热装瓶要不然会粘在锅里的,剩的这点也没浪费,加点水加点姜煮开就是生姜麦芽糖水,自己做的真是一点都舍不得浪费
