京酱肉食的传统的吃法是用豆腐皮包住肉丝,却更喜欢用春饼卷住肉丝,一口咬下去,面香、酱香、肉香……

    Steps to make 京酱肉丝

    • 1.主要原料:猪里脊、白糖、甜面酱、大葱。
    • 2.猪里脊切丝,加入料酒、少许食盐、蛋液、水淀粉抓均腌制一会。
    • 3.甜面酱加入一大勺白糖,一勺香油搅拌均匀备用。
    • 4.大葱切成丝铺在盘底。(只用葱白部分)
    • 5.炒锅烧热放底油,下入腌制好的肉丝滑熟。盛出备用。
    • 6.锅中放少许底油,倒入调好的甜面酱煸炒。(因为甜面酱没有提前蒸制,多煸炒一会,让白糖和面酱更好的融合)
    • 7.面酱煸炒到油亮,下入滑炒好的肉丝,大火快速煸炒。
    • 8.快速翻炒,酱汁都均匀的裹在肉丝上关火,出锅,盛入铺满葱丝的盘子中即可。
