安徽皖南物产丰富,野味众多,因此,徽菜里面,有很多野味入菜。红扒野鸭,就是徽菜里的一道名菜,充分体现徽菜重色重火攻的特点。这道菜鸭肉酥烂,香浓可口,营养价值高,好吃的很。现在讲究环保了,野鸭也少了,还是不吃为好。这道菜,选用了放养的水鸭来做,口感、味道都很不错。

Steps to make 【徽菜】红扒野鸭

  • 1.水鸭宰杀洗净,从脊背开刀,除去内脏洗净。
  • 2.锅里加水烧开,将鸭子入锅焯水洗净。
  • 3.将五花肉切片、姜切片,香菇发好,葱洗净。
  • 4.焯水的鸭子洗净入砂锅。
  • 5.砂锅里加水,加入五花肉,水发香菇,八角,姜片,葱。加料酒,盐、生抽、老抽、白糖等,然后大火烧开,文火炖一个半小时。
  • 6.炖好的鸭子
  • 7.将炖好的鸭子装盘
  • 8.将炖鸭的原汁在炒锅里用湿淀粉勾芡。
  • 9.将勾芡的原汁淋到炖好的鸭子上面就行了。
