麻婆豆腐

  • 豆腐一块
  • 豆瓣酱一大勺
  • 花椒20几颗
  • 辣椒面两勺
  • 生姜2g
  • 大蒜2g
  • 葱花3g

Steps to make 麻婆豆腐

  • 1.准备新鲜干净的牛肉一块,买回来之后冷水里浸泡干净血水用刀剁成碎碎的肉糜
  • 2.剁好的肉肉放入一个小碗内,加入少许生抽,胡椒粉,生粉,食用油拌匀腌制一会儿
  • 3.做这个一定要用嫩豆腐哦
  • 4.大蒜切细末
  • 5.生姜同上
  • 6.平底锅开火,加热,然后熄火加入花椒慢慢烤香
  • 7.烤好的花椒放入一个深一点的碗里,用擀面杖碾碎
  • 8.豆瓣酱也要剁的碎碎的待用
  • 9.豆腐切成均匀的小块
  • 10.锅里上水,倒入少许盐,烧开加入切好的豆腐焯水去除豆腥味儿
  • 11.锅里倒油,生姜大蒜末爆香
  • 12.切好的豆瓣酱小火慢慢炒出红油
  • 13.有人要求一定要吃真的麻辣的特意自己磨得特辣的辣椒面,不喜欢辣的忽略我加了好几勺
  • 14.花椒面也是,加了一大勺
  • 15.一定要小火,不然容易糊
  • 16.加入适量开水煮一会儿入味儿
  • 17.加入豆腐,注意要轻轻的不然豆腐全碎了
  • 18.大火煮开后转中小火慢慢煮制,汤剩三分之一的时候加入适量盐,鸡粉调味儿
  • 19. 最后加入提前准备好的水淀粉
  • 20. 收汁儿出锅即可
  • 21.朋友看到这碗麻婆豆腐眼睛都放光了哈哈,别的菜都没吃,光这个两碗饭下肚然后还口齿不清楚的说就是这个味儿
