Steps to make 水煮肉片

  • 1.里脊肉适量切薄片
  • 2.黄豆芽适量(喜欢什么就准备什么)
  • 3.泡姜,泡青红辣椒切米,花椒,干辣椒切段,葱,生姜,大蒜切沫.
  • 4.豆瓣酱麻辣火锅底料
  • 5.肉片加少许盐,料酒,生抽,胡椒粉,葱姜段抓匀抓一会,抓到粘手起胶
  • 6.在加入适量蛋清和生粉再次抓匀抓起胶,倒少许油锁住水分腌制十几分钟
  • 7.锅中放少许底油放少许姜蒜沫干辣椒小火炒香
  • 8.放入豆芽加少许盐炒至断生捞出
  • 9.炒好的豆芽放入盆中垫底
  • 10.另起锅放入多些底油倒入葱姜蒜米,花椒干辣椒,泡姜泡青红辣椒小火炒香
  • 11.放入两勺豆瓣酱半包麻辣火锅底料烹入适量的料酒小火炒出红油
  • 12.倒入适量的开水,调入少许的盐,糖,半勺胡椒粉,鸡粉一勺,魔厨高汤粉一勺大火煮五分钟
  • 13.然后过滤掉汤渣
  • 14.小火均匀放入肉片
  • 15.肉片煮都变白即可
  • 16.倒入盛有豆芽的盆中
  • 17.放入适量蒜末,小葱沫,花椒辣椒面(花椒和干辣椒混合后用锅小火炒香在擀碎成面即成也称之为刀口辣椒)
  • 18.锅中倒入少许油烧至冒烟,迅速放入一把干辣椒段
  • 19.直接浇入肉片上即可,撒少许熟芝麻香菜装饰.
