剁椒榨菜
自己做的小咸菜,干净又好吃!

Steps to make 剁椒榨菜

  • 1.新鲜榨菜头去掉老根,老筋,用干净的牙刷刷洗干净,尤其是缝隙处,洗净后晾干水分。
  • 2.将晾好的榨菜头切粗丝。
  • 3.将榨菜丝放入干净无油无水的容器中,加入适量盐。
  • 4.倒入约30ml(稍微多一点也没关系)的高度白酒。
  • 5.加入2汤匙的剁椒,(没有剁椒的话可以将红辣椒剁碎,和榨菜丝一起腌)搅拌均匀,腌制20分钟左右。
  • 6.取两个消过毒(用开水煮过,晾干水分)的玻璃瓶,将腌制好的榨菜装入瓶中,稍微压实。
  • 7.封上一层保鲜膜,盖盖密封,腌制30天。
  • 8.取适量腌制好的榨菜放入碗中;炒勺中倒入适量油,烧热。
  • 9.将热油泼在榨菜上,吃的时候拌匀。
