Steps to make 鱼儿南瓜紫薯包

  • 1.250克面粉与2.5克酵母粉混合,加入紫薯泥,边加边用手搓,尽量搓匀,加入60克温水,揉成光滑的紫薯面团。

  • 3.二种颜色的面团揉好后,盖上盖子或保鲜膜,置温暖处发酵至二倍大。
  • 4.食指沾上面粉,在中间戳个洞,洞口不塌陷不回缩,或扒开面团中间能看到里面已经成了蜂窝状,就发酵好了。
  • 5.将发酵好的面团揉匀至表面光滑,切开的面剂子切面处无明显气泡。
  • 6.将面团分成均匀的小剂子,取一份,按扁,用擀面杖擀成面皮,包入馅料,收口,包裹成圆形。
  • 7.将面团不断搓长,形成两端尖细、中间略粗的形状。
  • 8.将尾部向上折叠,用手轻压,用刀自中间位置切断,并在上面压上花纹。
  • 9.用剪刀在头部剪开一口,用一把小勺压出嘴唇。
  • 10.用小号挤花模在鱼头前部压上印,点缀红(黑)豆,做鱼眼睛。
  • 11.用小勺子,自尾部开始,压上花纹,做鱼鳞。
  • 12.在鱼背上捏出一小长条,用一把干净的梳子压出背鳍。
  • 13.在鱼身的一侧剪出一条侧鳍,另一侧剪三条,将红枣丝塞入鱼嘴内。
  • 14.将二种颜色的鱼儿依次完成,放入蒸锅,二次醒发20分钟。大火将水烧开,中火蒸15-20分钟关火,焖5分钟后再揭开锅盖。
