Steps to make 茶树菇烧五花肉

  • 1.材料:五花肉、茶树菇调味:冰糖、酱油、料酒、盐、八角1个、桂皮1段、葱段、姜片、干辣椒、香叶
  • 2.五花肉切成见方的块:干茶树菇放入清水中浸泡5小时以上。(泡的水不要丢掉)
  • 3.锅内放入冰糖翻炒,此时将火力调成中小火,以免冰糖炒糊。
  • 4.冰糖溶化开始出现金黄色时,将火力调到最小并不停搅拌糖浆,直到冰糖完全溶化,锅中出现棕红色糖浆时,放入五花肉不停翻炒,直到上色。
  • 5.放入葱段、姜片,烹入料酒、酱油后将五花肉炒匀,出香味,直到五花肉没有多余的水分析出,颜色变的稍深。
  • 6.放入剩余的葱姜、加入干辣椒、八角、桂皮、香叶等香料,倒入茶树菇水没过肉块。
  • 7.用大火将汤汁烧开,然后转至砂锅中小火加盖,慢慢炖40分钟,直到肉块成熟。
  • 8.放入茶树菇,拌匀后继续加盖焖10分钟,直到茶树菇软烂。肉块酥烂时,转成大火将剩余汤汁收干即可。
