桂花糯米藕
桂花糯米藕又名蜜汁糯米藕,是江南地区汉族传统名点之一,糯米灌在莲藕中配以桂花酱、大红枣一起精心制作,是江南地区传统菜式中一道独具特色的中式甜品,以其香甜、清脆、桂花香气浓郁而享有口碑。杭州桂花糯米藕软绵甜香,西湖的莲藕则是藕中的极品,同样著名的南京桂花蜜汁藕更是和“桂花糖芋苗、梅花糕、赤豆酒酿小圆子”一同被誉为金陵南京四大最有人情味街头小食。
身在江南水乡,怎能不去品尝当地特色,第一次学习,用的冷冻桂花,怕太甜也省去了加糖蜂蜜再蒸的一步,也许不是那么地道,但是那香甜、清脆、可口、桂花香气浓郁的口味深入我心,不怎么爱甜点的我,一次也吃了好几片。
重点是那藕断丝连,多少纠结,多少情感,又有多少的难已割舍........
恐怕只有这份甜点可以为你表达了。

Steps to make 桂花糯米藕

  • 1.糯米事先泡软(浸泡2小时左右)
  • 2.藕节洗刷干净,一头切下2cm左右
  • 3.把浸泡好的糯米灌进莲藕的小孔里,每一个小孔都要灌满,用筷子使劲捣实灌满后(每一个孔里都要灌)。
  • 4.切面用牙签固定
  • 5.准备好的红糖,枣,藕放入锅里,加入清水,清水盖过莲藕就可以,大火煮开,小火慢炖2小时左右
  • 6.如果喜欢软烂一点的可以多煮些时间,但是一定要注意时间越长汤汁会越浓,这时就会容易糊了锅底,最后再加入适量冰糖,收下汤汁
  • 7.出锅凉凉,切片再撒上一勺冷藏桂花浇上汤汁即可,第一次做,我居然可以吃上好几片。
  • 8.成品藕断丝连
